1. Remove and Clean Product Racks and Rack Hangers

  • Step 1: After the smoker has cooled, remove all product racks and rack hangers from the smoker.
  • Step 2: Take the racks and hangers to a designated cleaning area, such as a sink.
  • Step 3: Use a commercial foodservice detergent or degreaser to thoroughly clean them. Follow the detergent manufacturer’s instructions for safe and effective use.
  • Step 4: Wear protective gear, such as goggles and rubber gloves, to protect your skin and eyes from chemicals.
  • Step 5: Rinse the racks and hangers with clean water to remove any detergent residue.

2. Sanitize Product Racks

  • Step 1: Once the racks and hangers are cleaned, apply a commercial foodservice sanitizer to sanitize them.
  • Step 2: Follow the sanitizer manufacturer’s instructions carefully, including proper usage, cautions, and warnings.
  • Step 3: Use protective gear (goggles and rubber gloves) when handling the sanitizer to avoid contact with skin and eyes.

3. Drain the Grease After Each Cook Cycle

  • Step 1: After completing each cook cycle, drain the grease from the smoker to prevent buildup and reduce fire risks.
  • Step 2: Refer to the “Grease Removal Instructions” on page 22 of the smoker's manual for detailed steps on safe and effective grease removal.
  • Tip: Keep a regular schedule of grease removal to prevent any overflow issues.

4. Remove Ashes and Coals from the Firebox

  • Step 1: Once the smoker has cooled after each cook cycle, open the firebox and remove any ashes and coals.
  • Step 2: Follow the “Ash Removal Instructions” on page 21 of the manual to ensure proper handling and disposal of ash and coals.
  • Tip: Removing ash and coals regularly helps maintain optimal airflow in the firebox and prevents ash buildup, which can impact cooking performance.
