Quarterly Maintenance Guide for Southern Pride Smoker

Coby Poluk |

1. Check the Drive System Cover and Retainer/Set Screws

  • Step 1: Remove the drive system cover and service compartment cover (all models except SPK-1400).
  • Step 2: Inspect the retainer and set screws on both the small and large sprockets to ensure they are secure.
  • Step 3: Tighten the screws if they have loosened. A loose screw could affect the drive system’s functionality and longevity.

2. Clean Creosote Buildup on the Baffle Board

  • Step 1: Open the firebox to access the baffle board.
  • Step 2: Scrape any creosote buildup off the firebox side of the baffle board. This prevents excessive buildup that can become a fire hazard and affect airflow.
  • Tip: Use a scraper that’s suitable for high-heat environments to avoid damage to the baffle board.

3. Remove and Clean the Product Door Latches

  • Step 1: After turning off the smoker and allowing it to cool, open the product door with the roller in the open position.
  • Step 2: Using a crescent wrench, place it on the edge of the latch cover, applying force toward the smoker. This will pop the latch cover free so you can remove the latch from the backing plate.
  • Step 3: Clean the latch thoroughly to remove any grease or debris buildup.
  • Reinstallation:
    • Step 1: Position the door latch with the roller in the up position over the backing plate, hooking the latch over the tabs on the backing plate.
    • Step 2: Press the bottom of the latch into the backing plate until it locks securely in position.

4. Inspect and Maintain the Rotisserie Drive System (Model SPK-1400 Only)

  • a. Check the Gearbox/Reducer Oil Level
    • Step 1: Locate and remove the oil level plug on the front of the gearbox/reducer.
    • Step 2: Check that the oil level reaches the plug opening. If no oil is visible, add Mobil Glygoyle 460 oil until it begins to overflow slightly.
  • b. Check Gear Mesh
    • Step 1: Inspect the gears for proper alignment and wear. If you notice uneven wear, the gears may require re-alignment.
  • c. Grease the Spur Gears
    • Step 1: Spread a thin layer of grease over the small and large spur gears. Avoid using excessive grease, as this can cause buildup and attract debris.
  • d. Inspect and Adjust the Pulley Belt
    • Step 1: Check the belt for any cracks or frays. Replace the belt if it shows signs of wear.
    • Step 2: Press down on the belt; it should have about 1/4” of flex. If not, it may need re-adjusting.
    • Adjustment:
      • Step 1: Loosen the nuts on the belt tension bolts.
      • Step 2: Adjust the bolts upward or downward to reach proper belt tension, then re-tighten the nuts.
