No. You didn't. Here's the thing — that first smoke on commercial equipment is almost always disorienting, and the ribs you're looking at are telling you something important about the transition you're making.
The Physics Changed, Not Your Skill
When you move from a stick-burner or even a high-end residential pellet unit to something like an SP-700 or SPK-1400, you're not just scaling up capacity. You're entering a fundamentally different heat transfer environment. The social media BBQ crowd loves to debate equipment endlessly — this brand versus that brand, pellet versus stick, cabinet versus rotisserie. Most of that discourse is guys cooking eight racks a week max talking about production decisions they've never faced. When you're running a food truck or catering operation and you need to put out 40 identical racks for a Saturday event, consistency stops being a debate topic. It's your entire business model.
Your first smoke on commercial equipment felt weird because you were using backyard instincts in a professional environment. Those instincts aren't wrong — they're just incomplete for what you're doing now. The ribs told you exactly that.
So run the next batch with more wood, higher initial temp, and zero expectations based on past experience. Take notes. Make adjustments.
