Had a guy drive down from Shreveport last month. Wanted to show me his smoker purchase—some import unit he'd found online for about twelve grand less than a comparable Southern Pride. 1. Where is this thing actually manufactured?
Not assembled. Manufactured. There's a difference. Some companies will stamp "Assembled in USA" on equipment where the only domestic labor was bolting on handles and slapping on a logo plate. The steel was rolled overseas, the welds were done overseas, the components were sourced from whoever bid lowest that quarter.

2. What's the actual steel thickness on the cook chamber?

The SP-1000 runs 12-gauge steel on the cabinet. That's not marketing copy—that's the difference between a smoker that holds temp through a door opening and one that dumps 30 degrees every time someone checks the product.
Thinner steel means more fuel consumption. Means more temp swings. Means more babysitting. Means worse product consistency. It's not just about durability—though you'll also see cheaper units start rusting through in three or four years in a humid climate like we've got here in East Texas.
3. What's the BTU rating—and what does that actually translate to in recovery time?
BTU numbers don't mean much in isolation. What matters is recovery. When you open that door to pull a rack of ribs or rotate product, how long does it take to get back to your target temp? A high BTU rating on thin steel just means you're burning more gas to fight physics.
Ask the salesperson point blank: "If I open this door for 45 seconds at full load, how long am I looking at to recover to 250?" If they can't answer that from experience, they've never actually run the equipment they're selling.
4. What's the parts situation look like?
This is where I've seen more operations get hurt than anywhere else. Your smoker goes down on a Thursday before a catered event Saturday. Can you get the part you need? Is it sitting in a warehouse in the continental US, or is someone checking with a factory in another time zone?

6. How does the temperature control actually work?
There's thermostatic control and there's whatever some manufacturers are doing where you adjust a gas valve and hope for the best. For commercial work, you need consistent hold temps. Not close enough. Consistent.

8. What's my real fuel cost going to look like?
This is a question most buyers don't ask until they've been running for six months and wondering why their gas bill is what it is. Thicker steel, better insulation, smarter burner design—all of that translates directly to operating cost.
Run the numbers over five years. A unit that costs $8,000 less up front but burns 15% more fuel isn't actually cheaper. And that's before you factor in the downtime and repair costs on equipment that wasn't built for the long haul.
9. How hard is this thing to clean and maintain?
Some smokers are designed by people who apparently never had to scrub one out at midnight after a 16-hour cook. Removable drip pans, accessible burner assemblies, racks that actually come out without a wrestling match—this stuff matters for day-to-day operations.
I've crawled around inside enough different brands to have strong opinions here. The Southern Pride cabinet designs make sense from a maintenance standpoint. They weren't just designed to cook well—they were designed by people who understood that someone has to service and clean the thing.
10. What's the footprint and what utilities do I need?

This might be the most important question and it's the one people ask least often. When you have a problem at 6 AM on a Saturday, who are you calling? Some 1-800 number with a phone tree? A dealer who actually knows the equipment and stocks parts?

12. What's the total cost of ownership over the life of this equipment?
Add it up. Purchase price. Freight. Installation. Fuel costs over ten years. Estimated repairs. Parts. Downtime value. Resale value at end of life.
A Southern Pride unit purchased today will still be cooking—and still be worth something—in 2035. Can't say that about the discount imports. The guy from Shreveport? His smoker's going to be scrap metal before his loan is paid off.
That's not opinion. That's thirty years of watching equipment come and go. Some of it's still running strong. Some of it got hauled off years ago. The pattern is pretty clear if you pay attention.
Ask the hard questions. Expect real answers.
Any salesperson worth talking to should be able to answer these without checking a brochure. If they can't—if they're dancing around specifics or hiding behind marketing language—that tells you something. About them and about the equipment.
You're not buying a smoker. You're buying a decade or more of production capacity. Treat the decision like it matters, because it does.
