A stick burner or offset firebox is mechanically about as straightforward as it gets. You build a fire. The fire makes smoke. The smoke travels into your cooking chamber. No electronics, no augers, no ignition systems. Just combustion and airflow.
The problem is that "simple" and "easy" aren't the same thing.
Running a traditional firebox well requires someone who understands fire management — and I mean really understands it, not just knows how to stack wood. You're constantly adjusting intake dampers, managing coal beds, feeding splits at the right intervals. The temperature swings can run 30 to 50 degrees if you're not paying attention, and paying attention means someone physically present, not doing prep work or running front of house.
I've seen operators fall in love with the romance of a stick burner. And I get it — there's something satisfying about working a live fire. But by month three of running a high-volume operation, most of them are exhausted. The ones who stick with it either have dedicated pit crews or they're the kind of person who genuinely enjoys waking up at 3 AM to check their fire. Those people exist. From a maintenance standpoint, fireboxes are forgiving in some ways. No circuit boards to fry. No auger motors to seize. But you're dealing with more intense heat stress on the steel, faster creosote buildup, and warped doors if the thing isn't built heavy enough. Pellet smokers solved a real problem. They give you consistent temperature control without requiring someone to babysit a fire. An auger feeds compressed wood pellets into a burn pot, an igniter starts the combustion, and a controller adjusts feed rate to maintain your set point. Set it at 225°F and walk away.
For backyard use, that's fantastic. For commercial use, it gets complicated.
The first issue is the smoke itself. Pellet smoke is lighter than what you get from a stick burner — the combustion is more complete, which means less of the particulate matter that creates heavy smoke rings and that deep bark formation. Some operators don't mind. Others feel like they're not getting the flavor profile their customers expect. If you're doing light volume and the smoke flavor is secondary to convenience, a pellet system can work. Know what you're getting into with the electronics and parts sourcing.
For most commercial operators — restaurants, caterers, competition teams running high volume — the gas-infused approach hits the sweet spot. Consistent smoke. Consistent temperature. Dramatically lower maintenance burden. And when something does eventually need attention, you're not waiting a month for parts from overseas.
I'm obviously partial to Southern Pride. But that partiality comes from two decades of seeing what holds up and what doesn't.
