Interior Cleaning and Sanitizing

  1. Prepare for Cleaning:

    • Ensure the smoker is cool before cleaning; do not apply cleaner on a hot surface.
    • Remove all product racks from the smoker to allow easy access to the interior surfaces.
  2. Apply Cleaner:

    • Use a commercial-grade detergent/degreaser suitable for food service equipment. Avoid abrasive cleaners, chloride-based cleaners, or any product containing quaternary salts.
    • Note: Never use hydrochloric acid (muriatic acid) on stainless steel.
    • Wearing protective gloves and goggles, apply the cleaner to all interior surfaces-walls, ceiling, and floor-and allow it to soak for about 10 minutes to break down grease and residues.
  3. Rinse Thoroughly:

    • Rinse the interior with water, using a water hose or pressure washer (do not pressure wash the convection fan blade; remove it before cleaning).
    • Place a container under the drain to collect wastewater, then dispose of it according to local environmental regulations.
  4. Repeat If Necessary:

    • Inspect the interior for any areas that remain dirty. Reapply cleaner and rinse if needed to ensure thorough cleaning.
  5. Sanitize the Interior:

    • Apply a food-grade sanitizer to all interior surfaces, including walls, ceiling, floor, and the convection fan.

    • Let the sanitizer sit for 10 minutes to ensure proper sanitation, then rinse with a cloth and warm water.

    • Dry the interior with a clean, soft cloth or allow it to air dry by leaving the product door open.

    Note: Follow all local and state health department guidelines for cleaning and sanitizing requirements.


Stainless Steel Surfaces

  1. Choose the Right Cleaner:

    • Use only non-abrasive, chloride-free cleaning products designed for stainless steel.
    • Avoid any products containing quaternary salts or hydrochloric acid to prevent corrosion.
  2. Cleaning and Polishing:

    • Apply the stainless steel cleaner per the manufacturer's instructions. Use a soft cloth to clean and polish, ensuring to wipe along the grain of the steel to avoid scratches.

Exterior Cleaning

  1. Prepare for Exterior Cleaning:

    • Turn off and disconnect the smoker's power supply, and if mobile, turn off LP gas.
    • Allow sufficient time for the smoker to cool down (about one hour if recently in use).
  2. Wash the Exterior:

    • Clean the smoker's exterior surfaces using a mild soap and water solution. Avoid abrasive materials like scotch bright or scouring pads, which can scratch the finish.
    • For stubborn spots, use a non-abrasive pad, ensuring you scrub in the direction of the visible grain on the stainless steel.
  3. Polish Stainless Steel Surfaces:

    • After washing, apply a stainless steel polish to all exterior surfaces for a clean and polished look.
    • Pay special attention to the control panel, door handles, and door gaskets, as these areas often collect food debris.
  4. Final Touches:

    • Dry all surfaces with a soft cloth to prevent water spots and restore the stainless steel's shine.
    • Leave the smoker in a clean, dry state, ready for the next use.

Following this as-needed cleaning routine will help keep your Southern Pride smoker safe, clean, and in good working condition. Regular attention to both the interior and exterior will prevent buildup, maintain a professional appearance, and comply with local health regulations.
