There are several degreasers available from Menards, Lowes, Home Depot, Dollar General and Sam’s Club.
We personally use the one from Sam’s Club which is a foaming degreaser. It is called Grill & Oven Degreaser, it comes in a three pack of 1 quart bottles and includes a spray nozzle with a finger trigger.
Another product that we have used is Greased Lightning and you can find it at any of the other stores I mentioned. There are plenty of products out there, some are citrus based so a little more eco-friendly.
Before cleaning we suggest heating the smoker up to about 200° then turn off the smoker. we then pressure wash the racks and inside of the smoker.
Next use the degreaser on the racks and inside the smoker. Let it sit for about 15-20 minutes and then pressure wash the racks and inside the smoker. We flip the food racks and wash the bottom of the racks too.
Rinse them off thoroughly after cleaning.
We also typically remove the hangers and food racks once they are clean to better access the inside of the smoker.
Rinse the inside of the smoker thoroughly after cleaning. Once clean I put the racks back in and turn the smoker back on and run it at 200° for about 30 minutes to dry.
