If the steam elements on an SRG-400 are pulling power while the unit sits in idle mode, don't ignore it. That's not normal behavior and it points to one of two problems: a broken wire shorting to ground, or reversed polarity at the power supply backfeeding voltage to the element through the ground wire.
Here's the tricky part. A unit with reversed polarity can run for a long time without showing any obvious symptoms. It may cook fine, hold temp fine, and give no indication anything is wrong — until it does.
How to Test It
Start at the wall, not inside the smoker. Unplug the unit from the outlet and check the outlet itself with a multimeter before you go any further.
- Hot (small blade connector on the plug) to ground (small round hole on the outlet): you should read 120v.
- Neutral (the larger blade on the outlet) to ground: you should read 0v.
If those readings check out, the problem isn't at the wall — it's downstream in the smoker's wiring or in the element itself.
What We Found on This Unit
On the SRG-400 we pulled in for this exact complaint, the outlet was reading 72v from neutral to ground. That's not supposed to happen. It told us the hot and neutral legs feeding the outlet had been reversed somewhere upstream.
Correcting the wiring at the outlet — putting hot and neutral back where they belong — resolved the issue completely. No parts needed, no element replacement. Just a wiring correction on the building side of the equation.
If the Outlet Checks Out
If you test the outlet and get proper readings (120v hot-to-ground, 0v neutral-to-ground), the polarity at the source is fine. That means the issue is inside the smoker: a broken wire shorting to ground, or a failed steam element itself.
At that point you're pulling the element and its leads to inspect for damaged insulation, chafed wire, or a compromised element that's shorting internally. Don't assume it's the element until you've ruled out the wiring and confirmed the outlet is wired correctly.
Why This Matters
Reversed polarity isn't always dramatic. It can sit there for months without tripping a breaker or throwing a visible fault. But an element that's energized when it shouldn't be is a safety issue waiting to surface, whether that's premature element failure, a nuisance short, or worse. If you've got any element on a Southern Pride unit that seems to have power when the unit is idle, start with a multimeter at the wall before you start pulling the machine apart.
